Established in the late 1960s by Fairfield’s own Luigi Giansanti, Luigi’s Restaurant began as a humble pizza palace with a passion for authentic flavor. In 1975, the Cavalli family took the reins, and just a year later, Giulio Cavalli journeyed from Ripi, Italy to join the family business and infuse it with the traditions of his homeland.
After a fire in 1978, Giulio and his brother Gianni rebuilt Luigi’s—installing the largest rotating pizza oven in town, which still fires up pizzas to perfection today.
