1. Fort Smith Coffee Co.

Our journey began in 2005 when we moved overseas, spending a year in Sydney, Australia. There, we discovered the true essence of coffee—ethically sourced, freshly roasted, and bursting with flavor. While Gabe studied theology and music ministry, Kaity immersed herself in the coffee world, working for a roasting company and developing a deep appreciation for the community that coffee fosters.

After returning to the United States, starting a family, and moving around for several years, we eventually settled in Fort Smith, Arkansas. Seeking freshly roasted coffee but finding none available locally, we took matters into our own hands—roasting green coffee beans in our kitchen with a simple popcorn popper.

In 2014, we invested in a small-batch, fluid-bed air roaster, officially launching Hawk and Horse Coffee Roasting Company. Inspired by Shakespearean Sonnet 91, our brand symbolized a love beyond earthly pleasures. We honed our craft, selling our freshly roasted beans at local farmers’ markets and The Shops at BrickCity.

By 2016, it was time to establish a brick-and-mortar location. We discovered a charming, overlooked corner in downtown Fort Smith and saw its potential. Renovations soon began on 1101 Rogers Ave, revealing the character of its 1928-built filling station—distressed brick, graffiti, and an urban charm we embraced.

During this transformation, we dove deep into local coffee history and uncovered the legacy of Fort Smith Coffee Co., a major importer of Brazilian coffee founded in 1904. The rich past of this name perfectly complemented our vision, so we merged our Hawk and Horse roots with the historical identity, officially becoming Fort Smith Coffee Co.

On May 12, 2017, we opened our doors to the community, receiving immediate and overwhelming support. As demand grew, we expanded, creating a dedicated bakery and barista service inside The Shops at BrickCity.
