Established in 1935 in Stamford, Connecticut, Colony Grill has built a legacy around one unforgettable offering: a thin-crust pizza topped with our legendary “hot oil.” What began as a post-Prohibition tavern in an Irish immigrant neighborhood quickly evolved into a beloved institution serving up simple pleasures and big flavor.

Though the idea of an Irish pizza grill might raise eyebrows, locals—and soon, visitors from far and wide—fell in love with our spicy, pepper-infused twist on a classic. The founders, Irish-Americans, collaborated with talented Italian and Eastern European chefs during the Great Depression, proudly introducing bar-friendly versions of pizza from their homelands.
