Anytime I have ripe or an overripe banana at home, Banana bread is my go-to recipe. Some call it banana cake loaf or banana loaf, they are all the same thing.
This banana bread is so moist and delicious, the smell in my house anytime I am making banana bread is second to none. And the taste is nothing compared to the smell.
It looks so appealing and has a golden brown like chocolate colour after baking and removing out from the oven that you cannot wait to devour. But I will advise you to allow it to cool down before eating it.
Bananas cannot be too ripe for banana bread because the star ingredient in this recipe is the overripe banana.
I used Baking soda for this banana bread recipe because there was no baking powder at my disposal when making this banana bread. But you can use both because they both serve as rising elements in the bread or you can use the baking powder alone by doubling the baking soda measurement because baking soda is said to be more powerful than baking powder.
This banana bread recipe can stay up to 2 weeks inside the fridge, just make sure you wrap with Clingfilm and keep it in an airtight container to help it retain its moisture.

You can serve this banana bread cold just like any other cake or microwave it for some minutes before eating and it can be served with any drink of your choice.
If you did not like sugar, you can reduce the sugar content in this banana bread recipe and adjust it to your taste or use another sweetener like honey, date syrup and date powder.
you can freeze your banana bread and microwave it for some minutes when you are ready to eat.
For this banana bread recipe, I garnished it with some coconut flakes and Cashew nuts for an extra crunch and to make it look more appealing. You can as well add raisins, almonds, peanuts etc.
Lastly, I added cinnamon for an extra flavour but you can use vanilla flavour or banana flavour.’
