This banana bread or cake recipe is easy to make at home. With this recipe, you will make the best, moist, delicious, and fluffy banana bread.

Anytime I have ripe or an overripe banana at home, Banana bread is my go-to recipe. Some call it banana cake loaf or banana loaf, they are all the same thing.

This banana bread is so moist and delicious, the smell in my house anytime I am making banana bread is second to none. And the taste is nothing compared to the smell.

It looks so appealing and has a golden brown like chocolate colour after baking and removing out from the oven that you cannot wait to devour. But I will advise you to allow it to cool down before eating it.

Bananas cannot be too ripe for banana bread because the star ingredient in this recipe is the overripe banana.

I used Baking soda for this banana bread recipe because there was no baking powder at my disposal when making this banana bread. But you can use both because they both serve as rising elements in the bread or you can use the baking powder alone by doubling the baking soda measurement because baking soda is said to be more powerful than baking powder.

This banana bread recipe can stay up to 2 weeks inside the fridge, just make sure you wrap with Clingfilm and keep it in an airtight container to help it retain its moisture.

You can serve this banana bread cold just like any other cake or microwave it for some minutes before eating and it can be served with any drink of your choice.

If you did not like sugar, you can reduce the sugar content in this banana bread recipe and adjust it to your taste or use another sweetener like honey, date syrup and date powder.

you can freeze your banana bread and microwave it for some minutes when you are ready to eat.

For this banana bread recipe, I garnished it with some coconut flakes and Cashew nuts for an extra crunch and to make it look more appealing. You can as well add raisins, almonds, peanuts etc.

Lastly, I added cinnamon for an extra flavour but you can use vanilla flavour or banana flavour.’

Recipe Ingredients:

  • 3 Overripe banana
  • 2 large eggs
  • 1/3 cup of milk
  • 1/3 cup of yoghurt
  • 2 tablespoons of butter
  • 1 tablespoon of cinnamon powder
  • 2 tablespoon oil
  • 1/3 cup of sugar
  • 1 teaspoon of baking soda
  • 1 teaspoon of salt
  • 2 cups of all-purpose flour

Recipe Instructions:

Method:

  • In a bowl, mash the 3 Overripe bananas together with a masher or fork, then set aside.
  • In another bowl, mix sugar and butter until it is well combined, add the 2 large eggs, and the oil and mix everything together.
  • Add yoghurt and milk together with the mixture and combine everything.
  • Then add the mashed banana together with the egg mixture and mix everything.
  • Add flour, sugar, baking soda, cinnamon powder and salt then mix everything together until it is well combined.
  • Linen your baking pan with a baking paper or foil paper, grease the pan with oil or butter then fill it with the batter. Make sure you fill the pan halfway to avoid spillage when baking.
  • Sprinkle some coconut flakes and Cashew nuts.
  • Place the butter in a medium heat preheated oven and bake for about 40 to 45 minutes or till a stick or toothpick inserted in the middle of the banana bread comes out clean.
  • Allow to cool down completely then serve and enjoy. Note: you can also use a muffin pan or cupcake pan to bake the banana bread.
  • If you are using salted butter, it is advisable to reduce the salt content or avoid it completely.
  • You can decide not to use yoghurt you’ll just double your milk content.
